Editorial Note: Jacque Nyenhuis wrote a regular Baton Rouge Morning Advocate column, often labelled “Cajun Microwave,” about cooking Cajun-style food in a microwave oven, but he does not seem to be responsible for naming the Cajun microwave defined here.

Some are lined with metal. Handles make the box easier to transport. Some are mounted on carts at waist level and have rubber wheels. 2006 Jan Norris Palm Beach Post (Florida) (Mar. 23) “Key to great barbecue? Low and slow”: Another “cold” smoker, commonly called a “cajun microwave” was welded to the back. Coals are place in a tray atop the smoker that looks something like an insulated metal cooler.
